Spinach & Egg White Power Scramble

Ingredients (serves 1–2)

  • 4–6 egg whites

  • 1 cup fresh spinach, chopped

  • ½ small onion, finely chopped

  • 1 tsp olive oil (or any light cooking oil)

  • Salt, to taste

  • Black pepper, to taste

  • (Optional) garlic, minced (½ clove)

  • (Optional) a sprinkle of cheese (e.g. Parmesan or feta)


 

Instructions

  1. Heat the pan
    Place a nonstick skillet on medium heat. Add the olive oil and let it warm up.

  2. Sauté aromatics and spinach
    Add onion (and garlic, if using). Sauté for 1–2 minutes until lightly translucent.
    Then add the chopped spinach and cook until it wilts (about 1 minute).

  3. Add egg whites
    Pour the egg whites over the spinach-onion mix. Let them sit for a few seconds to begin setting, then gently scramble (stir slowly) until cooked through but still moist (2–3 minutes).

  4. Season & finish
    Season with salt and pepper. If using cheese, sprinkle it in just before turning off the heat so it melts slightly.

  5. Serve
    Plate immediately. You can pair it with a slice of whole-grain toast or fresh tomatoes on the side.


Tips & Variations

  • Don’t overcook—egg whites can become rubbery if cooked too long.

  • You can whisk the egg whites a bit before pouring to make them fluffier.

  • Add in extras like mushrooms, bell peppers, or cherry tomatoes for variety.

  • Use low-fat cheese or none to keep it lean.

  • For more flavor, add herbs like parsley, chives, or a pinch of red chili flakes.
